Easy One-Pot Taco Pasta
Taco night and pasta night meet in one pot here: browned beef, tomatoes, warm spices and pasta cook together until the sauce clings to every bite. The starch released by the pasta thickens the mixture naturally, giving the dish a creamy, cohesive texture without a separate sauce.
Choose a sturdy short pasta and stir several times as it cooks so nothing settles on the bottom. Add cheese at the end, then finish each bowl with the taco toppings you actually enjoy—avocado, cilantro, jalapeño or a spoonful of yogurt all work.

A Few Sensible Swaps, Not a New Recipe
- Use ground turkey instead of beef.
- Add black beans for extra fiber.
- Use pepper jack cheese for more heat.
- Top each bowl with crushed tortilla chips for crunch.
