Crispy Air Fryer Smashed Potatoes
Smashed potatoes get their best texture from two stages: boiling makes the centers creamy, then air frying turns the rough, flattened edges crisp and deeply golden. Garlic and smoked paprika settle into those cracks, giving each potato more seasoned surface area than a whole roasted potato.
Let the boiled potatoes steam dry for a few minutes before smashing. Press them firmly but not so hard that they fall apart, then brush or toss with oil before the final crisping step.
Smashed Potatoes Are All About Surface Area
- Boiling the potatoes first makes the centers tender enough to flatten without breaking into dry pieces.
- Smashing increases the surface area, creating more rough edges for the air fryer to crisp.
- Letting the potatoes drain well keeps excess water from working against browning.
- Parmesan is added near the end so it can toast without burning before the potatoes are fully crisp.

Crispy Air Fryer Smashed Potatoes
Ingredients
- 1 1/2 lb baby potatoes
- 1 1/2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan
- 2 tbsp chopped parsley
Instructions
- Boil potatoes in salted water for 12–15 minutes until fork-tender, then drain well.
- Preheat the air fryer to 400°F / 204°C.
- Flatten each potato to about 1/2 inch thick and brush both sides with olive oil.
- Season with garlic powder, paprika, salt and pepper.
- Air fry 18–22 minutes until crisp, adding Parmesan during the final 4 minutes.
- Finish with parsley and serve hot.
Notes
Boil Until Tender, Not Falling Apart
The potatoes need to be soft enough to flatten but still intact. A fork should slide in easily; if the skins are already splitting apart in the pot, they may crumble when you smash them.
More Surface Area Means More Crunch
Flatten each potato to about 1/2 inch thick. The rough, broken edges created by smashing are exactly what turn crisp in the air fryer, so do not try to keep the surface perfectly smooth.
Dry Before You Oil
Let the boiled potatoes steam off for a moment before brushing with oil. Less surface moisture means the hot air can crisp the edges faster.
Reheat Where Air Can Circulate
Smashed potatoes are best reheated in the air fryer or oven in a single layer. That restores the crisp edges much better than trapping them in steam in the microwave.
