Crispy Air Fryer Zucchini Fries
Zucchini can turn soft quickly, so the goal with these fries is a light, crisp coating that protects the tender center. Panko and Parmesan create a crunchy shell, while garlic and Italian seasoning add enough flavor that the fries are good even before you reach for a dipping sauce.
Drying the zucchini well and leaving space between the pieces makes a noticeable difference. Cook them in batches if needed; crowded fries steam against one another instead of crisping around the edges.

- 1 tsp garlic powder

- Set up three shallow bowls: flour in the first, beaten eggs in the second, and panko, Parmesan, garlic powder, Italian seasoning, salt and pepper in the third.
- Coat each zucchini stick in flour, then egg, then the panko mixture, pressing gently so the coating adheres.
- Arrange in a single layer in the air fryer basket and lightly spray with olive oil.
- Air fry at 390°F / 199°C for 8–12 minutes, turning once, until golden and crisp.
- Serve immediately while the coating is crunchy.
Notes
What to Pay Attention to While It Cooks
- Dry the zucchini well before breading.
- Press the coating onto each piece so it sticks.
- Keep the basket in a single layer.
- Serve right away because zucchini softens as it sits.
Change the Flavor Without Rewriting the Method
- Use seasoned whole-wheat breadcrumbs instead of panko.
- Add smoked paprika for a warmer flavor.
- Try the same coating with yellow squash.
- Use pecorino in place of Parmesan.
