Crispy Air Fryer Buffalo Wings
Buffalo wings need two things to work well: crisp skin and a sauce that clings without making that skin soggy. A small amount of baking powder helps dry the surface in the air fryer, then the wings are tossed with buttery hot sauce only after they are fully browned.
Dry the wings thoroughly before seasoning and avoid crowding the basket. Toss with sauce just before serving so the exterior keeps as much crunch as possible.
Crisp Wings First, Buffalo Sauce Second
- A small amount of baking powder changes the surface of the skin and helps it dry and crisp in the air fryer.
- The wings cook unsauced first, so the skin can brown instead of steaming under a wet coating.
- Turning the wings several times exposes more of the surface to the hot circulating air.
- Buffalo sauce and melted butter are added only after cooking, preserving as much crunch as possible.

Notes
Dry Wings Before Anything Else
Surface moisture is the enemy of crisp skin. Pat the wings thoroughly dry before tossing them with baking powder and seasonings, and avoid adding sauce until after cooking.
Why Baking Powder Helps the Surface
A small amount of aluminum-free baking powder changes the surface environment of the skin and helps it dry and brown more readily. It is not a breading, so the wings should only have a light, even dusting.
Sauce Comes After Crisping
Mix the hot sauce and melted butter while the wings cook, then toss the wings as soon as they leave the basket. Saucing earlier would soften the surface before it has a chance to crisp.
Reheat in Dry Heat
If you have leftovers, reheat them in the air fryer or oven until hot, then add a small fresh spoonful of buffalo sauce if needed. Microwaving is faster but sacrifices most of the crisp texture.
