High-Protein Cottage Cheese Pancakes
Cottage cheese gives these pancakes a tender center and extra protein without making the batter feel heavy. Blended with oats and eggs, it creates a smooth batter with a mild flavor that pairs easily with berries, banana, cinnamon or a small drizzle of maple syrup.
Let the blended batter rest for a few minutes before it hits the pan; the oats absorb some moisture and the pancakes become easier to flip. Keep the heat moderate so the outside turns golden before the center sets.

Notes
The Part of the Method I Would Not Rush
- Use small pancakes because the batter is more delicate than traditional pancake batter.
- Keep the heat medium-low so the center cooks before the outside gets too dark.
- Let the batter rest briefly to hydrate the oats.
- Blend longer for a smoother texture.

Leftovers Need One Small Adjustment
Cool leftovers promptly and refrigerate in an airtight container. Reheat gently when appropriate, adding a splash of water or broth if the dish thickens during storage.
